The Australian cake shop that chooses flowers over fondant

When Nikki Lee quit her job as a corporate business development manager to launch Sydney bakery Unbirthday, she knew it was a leap of faith. But with the company’s Instagram feed racking up a whopping 97.9k followers in less than two years, it’s safe to say the gamble paid off.

Packed with mouthwatering images of elaborate fresh-flower adorned celebration cakes, it’s not hard to see why people just can’t stop gawping at Lee’s confectionary creations. Nor is it surprising that when her proud fiancé posted one of her signature wedding cake commissions on Reddit, the work of art quickly attracted over 2,500 ‘upvotes’.

Happy Unbirthday!

The offbeat name Unbirthday is a reference to Alice In Wonderland, where Alice has an Unbirthday party with the March Hare and the Mad Hatter – and the name couldn’t be more apt. Lee’s flamboyant and whimsical floral cake creations look exactly like the kind of sweet treats you would expect to find at the Mad Hatter’s tea party.

Say it with flowers

Celebration cakes have become a big business over recent years but while fondant icing is the mainstay of your typical bespoke celebration cake baker, Lee has a ‘no fondant allowed’ policy. Opting instead for fresh butter cream and smooth ganaches, Lee favours seasonal, edible fresh flowers over fondant figures to add that three-dimensional touch – and the result is so much prettier.

The ‘faux pav’

Unbirthday’s signature and most requested cake, the floral faux pav combines two layers of crispy french meringue with a marshmallow centre, styled with an assortment of edible flowers and mini mint leaves with fresh whipped cream, strawberries and blueberries. 

The ‘hero’ cake

A dazzling technicolour cake, dripping with chocolate and exploding with pretty flowers, cookies (your favourites on request), and vast curls of chocolate  -the hero cake is the kind of dessert Willy Wonka himself would have been hard pushed to rival. Where else could you find rose petals delicately arranged with such aplomb, alongside Kinder eggs, popcorn and Smarties?

Magnum Opus

Possibly the most beautiful wedding cake you will ever see, each layer of the Magnus Opum is iced with fresh vanilla butter cream and styled with a hand-picked selection of florist flowers and edible blooms, studded with gold dusted fruit and berries, and finished with shell piping.
