When you eat in the garden during the warm weather, you are sure to have a craving for something sweet. But not too heavy! This tart, accompanied by delicious red fruit picked from climbing fruits in the garden, is just the right fresh, sweet ending for a wonderful gathering.
Ingredients for 8 people:
- 2 rolls of fresh puff pastry
- 250 g almond paste
- 50 g butter
- 1 egg
- 800 g red fruit (raspberries, blackberries, blueberries, strawberries)
- Handful of verbena leaves (optional)
- icing sugar
- 200 ml crème fraîche
Preheat the oven to 180° C. Mix the almond paste with the butter and egg in food processor until smooth. Unroll one pack of puff pastry on a baking tray. Cut the other roll into long lines and spread over the edges of the rolled-out dough. Prick the inside of the tart all over with a fork. Spread the mixture over tart and cook for 20 minutes in the oven.
Allow the tart to cool and then cover completely with the red fruit. Add the verbena leaves and dust with some icing sugar. Serve the tart with crème fraîche.
* A quick word: never try to eat a (cut) flower or plant, make sure you only use edible flowers from specialized vendors that are grown for consumption.
