This is how you make peony syrup

The lovely colours and fine perfume of the peony aren’t only to be enjoyed in a vase. Did you know that the smell and color of the flower petals can also take your desserts and cocktails to new heights? So here's a recipe for peony syrup.

Ingredients for peony syrup

You can make peony syrup yourself, which tastes delicious in desserts or cocktails. This is what you need:

  • 500 grams of flower petals from edible peonies, preferably red*
  • 1 litre of water
  • 1 kilo of sugar
  • 2 saucepans
  • 1 sieve
  • and a little patience

This is how you make syrup from peonies

Buy the flowers and wash them thoroughly. Let the petals dry on a towel, indoors or in the sun. Boil the water, put the flower petals in a pan and pour the water on top. Cover with the lid and leave overnight.

The next day, place the pan back on the cooker and bring it to the boil. Sieve it into another pan and add the sugar. Now you let it cook until it has the right consistency (for desserts you need a thicker consistency than for cocktails). Ready!

PS: Do you want to make syrup with more colour and perfume? Repeat the above steps and add the syrup which you made earlier.

* Good to know: cut flowers from the shop are not suitable for consumption. Do you want to use flowers in food or drink? Then you'll need to buy flowers which are edible and grown for this purpose.
